Cajun Filet Mignon with Tomatillo Salsa and Fresh Lime Juice

Ingredients

  • 2 ea. 6 oz. filet tail
  • 2 tbsp. Cajun seasonings
  • 6 oz. tomatillo salsa recipe to follow
  • 1 ea. fresh lime
  • 2 tbsp. cilantro chopped

Tomatillo Salsa:

  • 1-1/2 cup tomatillos canned and pureed
  • 1 tsp. cilantro chopped
  • 1 tbsp. minced garlic
  • 1 ea. jalapeño seeded & diced
  • 1/2 ea. red onion diced

Instructions

  • In a heated cast iron skillet, place the 6 oz. filet heavily coated in Cajun spices and blackened to medium rare. Cube and serve in a hot skillet with tomatillo salsa and fresh lime juice. Garnish with fresh cilantro.

Tomatillo Salsa Preparation:

  • Combined all ingredients and refrigerate. Yields 2 cups.
