Cajun Filet Mignon with Tomatillo Salsa and Fresh Lime Juice

Ingredients
2ea. 6 oz. filet tail
2tbsp.Cajun seasonings
6oz.tomatillo salsarecipe to follow
1ea. fresh lime
2tbsp.cilantrochopped
Tomatillo Salsa:
1-1/2cuptomatilloscanned and pureed
1tsp.cilantrochopped
1tbsp.minced garlic
1ea. jalapeƱoseeded & diced
1/2ea. red oniondiced
Instructions
In a heated cast iron skillet, place the 6 oz. filet heavily coated in Cajun spices and blackened to medium rare. Cube and serve in a hot skillet with tomatillo salsa and fresh lime juice. Garnish with fresh cilantro.
Tomatillo Salsa Preparation:
Combined all ingredients and refrigerate. Yields 2 cups.
