Certified Angus Beef® brand standards

Taking our Angus program to the next level, Harris Ranch also proudly offers the Certified Angus Beef brand of beef. Only truly exceptional Black Angus beef earns the distinctive Certified Angus Beef® label. In fact, only one in four animals meet the carcass specifications needed to qualify for this exclusive Harris Ranch brand.

Set apart from the best of the USDA Choice and Prime grades, Certified Angus Beef® is incredibly flavorful, tender and juicy.

To earn this elite label, cattle must be Angus-influenced with a predominantly (51% or greater) black hair coat, and the beef must pass 10 science-based specifications for quality.

Marbling & Maturity

1. Modest or higher marbling (upper 2/3 of the USDA Choice grade or higher)
2. Medium or fine marbling texture (white “flecks of flavor”)
3. “A” maturity rating – under 30 months (youngest classification of product)

Consistency & Texture

4. 10- to 16-square inch ribeye area
5. 1,050-pound hot carcass weight or less
6. Less than 1-inch fat thickness

Appearance & Tenderness

7. Superior muscling (restricts influence of dairy cattle)
8. Practically free of capillary ruptures (most visually appealing)
9. No dark cutters (most visually appealing)
10. No neck hump exceeding 2 inches (safeguards against Brahman-influenced cattle, which have greater variability in tenderness)
